Kimura Brewery

Kimura Brewery was established in the first year of Genwa era (1615). It is the second oldest sake brewery in Akita Prefecture. We are the producers of the flagship brand “Fukukomachi” and the specialized label for exclusive retailers, “Kakuemon.”

Our products have been embraced by prestigious establishments including top sushi restaurants in Tokyo’s Ginza, luxury hotels, traditional Japanese restaurants, and international eateries. We have garnered numerous awards in various domestic and international competitions and assessments. In 2012, “Daiginjo Fukukomachi” was awarded the highest honor, “IWC Champion Sake,” in the SAKE division at the “International Wine Challenge (IWC),” the world’s largest wine competition. We have also received Platinum awards in the Junmai Daiginjo & Junmai Ginjo Sake category at the Sake Competition, Kura Master, in France. These accolades have solidified our reputation as a globally recognized sake brewery.

Yuzawa City in Akita Prefecture, known for its heavy snowfall, is home to Kimura Brewery. The abundant meltwater from this snowfall has ben recognized among the “best 100 waters in Japan.” Utilizing this pristine soft water, Kimura Brewery adheres to the tradition of “Kanzukuri” (cold brewing). The dedication of their artisans and the yeast cultures flourishing in the aged brewery work in harmony to produce a sake with a handcrafted feel.

During the frigin winter season, they undertake a process that does not rely on machines, but rather on the hands and eys of the skilled brewer to create the taste and aroma from their heart. This is why Kimura Brewery has been able to create a memorable flavor that no other brewery can produce.
